Chocolate Espresso Shortbread


Dorie’s Espresso-Chocolate Shortbread is my favorite TWD recipe this month. Love coffee and love cookies....what couldn't be better? Of course I'm pairing them with a ice coffee as I write this. I can't get enough ice coffee when it's so hot and humid in the East. Looks like Hurricane Earl may be bringing the rain back later in the week.......Ugh!


Of course that means I'll be stuck in the house baking some more and getting ready for the start of school next week. So if you like shortbread, consider adding this recipe to your collection.

here in New England.

I've decided of course to bake a load of cookies,
to get me through the week.

Nutty Peach Tart


This week’s “Tuesday with Dorie” selection of Crunchy and Custardy Peach Tart was made by Rachel of sweet tarte (how appropriate right?). This Tart was awesome!!!! One of those that you just can't stop eating. Nutty creamy goodness......
I started out by making a sweet walnut crust in a Individual size pan. Setting that aside, I peeled and sliced the peach into thin slices. Then after placing it into the shells, I covered it with the custard mixture. I baked for about 20 minutes, then added the streusel for another 5 minutes. This was so easy and simple. The honey drizzled on top added to the sweetness. Delish for sure!!! Check out Rachel's blog for the recipe or buy Dorie's book "From My Home to Yours".

Chocolate Ganache Ice Cream ....Grand Marnier Style

This week’s Tuesdays with Dorie recipe was picked by Katrina of Baking and Boys. She decided to choose Chocolate Ganache Ice Cream, which is one of the simplest recipes, ingredient wise, in the book. To get the complete recipe, visit Katrina’s blog. It’s just chocolate ganache (chocolate and heavy cream) and then ice cream/custard base mixed together. And with my little additions, it sure was ......Yummy!

Who doesn't love a great chocolate ice cream. This one is so rich and delish, it is hard to stop eating. I chose to change it up a bit, and bring it into adulthood. In the end of mixing, I allowed it to freeze up a bit and folded in some chocolate chunks chopped up from a bar, and orange puree, I have on hand for flavoring. Then to add a little kick, a few heavy drops of Grand Marnier. It doesn't get any better than that!

We are here on our 2nd week of our working vacation in Michigan.
And what have I done so far.....
Weed, Chop, Weed, Chop, Weed.....
and change over the guest rooms at the INN!
That was just the first week,
Now I 'm into repairing and painting.
I have been more busy here than at home!!!

At least the weather has been wonderful!

It's 15 minutes of Magic.....

I am doing a Dorie rewind today, because I am not even close togetting into a kitchen. I am on a working vacaation in Michigan right now. Working at my mother's old farm/B&B, on her 5 acres of land. Weeding,cutting, pulling,mowing, pruning.......those are all things have been up to since I arrived last week. The weather has been good. I have an excellent farmer's tan...LOL!

I am dreaming of this cake when I come in at night. Maybe I should breakdown and make it, even if it includes not sleeping. Hope fully my work will be done here soon, and I will be back to the same old routine!

Chocolate Amaretti Torte


This cake was super easy to make!

This weeks choice came from Holly @Phe-MOM-enon,
who has a weakness for Chocolate, she says.

I decided to make two layers instead of one,
because to me a torte is more than one layer.
This would be a great cake for Passover because there is no flour.
Instead the recipe ask you to grind up some Amaretti cookies.

I couldn't find them so I ground up some almond meringue cookies.
So,along with that and the ground almond, it acted as the flour.
This particular cake was all made in the food processor,
which meant, easy cleanup......yah!
