Orange Tian DB

The 2010 March Daring Baker’s challenge was hosted by Jennifer of Chocolate Shavings. She chose Orange Tian as the challenge for this month, a dessert based on a recipe from Alain Ducasse’s Cooking School in Paris.
I had never heard of Tian before this. When I looked it up, I was coming up with savory layered items, such as Mexican dip. It turns out that it’s a layered dessert. In this citrusy version it is made up of a pate sablée with orange marmalade, a flavored (again with marmalade) and stabilized whipped cream, topped with fresh orange segments. It should have been garnishes with caramel sauce, but I ran out of time. I might make this again, but I wasn't totally thrilled.
