Remember the No-Bakes......

Remember these???? A perfect blast from the past!
I used to make these as a kid, because they were cheap and everything was readily available at our house. I love these and my kids do too! Makes me feel like we're eating something good with all the oatmeal. And then if you add in some raisins or cranberries, maybe even almond....all the better.

Perfect for those moments when you are desperately craving something sweet and chocolaty, but don’t have a lot of time (or patience) to make a full-blown batch of cookies. The Peanut Butter and Oatmeal subdued the sweetness.

These really are as easy as they sound, and a great recipe to make with kids if you have any little hands eager to help in the kitchen. I’m sure they’ll love eating the “dough” straight from the bowl! The only suggestion I have is when you drop the dough onto the wax paper-lined sheets, they will pretty much set in whatever shape they are already in, with minimal spreading. After I realized this, I used the back of the spoon to smooth them out and flatten them a bit to give them more of a “cookie” shape.

2 cups sugar

1/2 cup cocoa

1 stick butter

1/2 cup milk

1 tsp. vanilla

3 cups quick-cooking oatmeal

1/2 cup peanut butter

**Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.
**Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.
**Drop by spoonful onto wax paper. Let cool for at least 30 minutes

Just dropped by your site to see what's cooking in your neck of woods, and this recipe sounds like a project for tonight, since I also have all the needed ingredients.

Stay warm! It is even cold here in DE.
