Cinnamon Squares
This week’s Tuesdays with Dorie recipe, Cinnamon Squares, was selected by Tracey of Tracey’s Culinary Adventures. Check out Tracey’s blog for the complete recipe. At first I thought that this was a bar cookie, but it is actually a coffee cake. The batter is heavily flavored with cinnamon and has a ribbon of chocolate in the middle of the cake. It also has a nice addition of powdered espresso, which is in a lot of Dorie's recipes.
I thought the batter was tasty, and perhaps would change it up and do berries in the middle. This would make the cake more moist. I would subtract the frosting on top and add on powdered sugar or strusel topping. The batter is easy to make, no mixer involved. Just mix by hand in a large bowl. It does take longer than I thought to bake, about 40 minutes.
