Oatmeal Scotcheroos

As, I told you on Monday, I was stocking up on cookies for the week. I tend to bake in the dozens when I bake cookies. Unfortunately, they don't last very long if they are tasty.
And they usually are of course!,
especially this ONE.....
Chewy Oatmeal Scotcheroos made with Butterscotch Chips.

Oatmeal Scotcheroos
1 1/4 cups all-purpose unbleached flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 eggs
1 1/2 teaspoon vanilla extract
3 cups quick oats
1 11oz. package butterscotch flavored morsels

**preheat oven to 350 degrees.
**combine flour, baking soda, cinnamon and salt in a small bowl and set aside.
**beat butter, sugars, eggs and extract in a large mixing bowl until soft and fluffy.
**gradually add flour mixture.
**stir in oats and morsels just until mixed. do not overmix.
** drop by rounded tablespoons onto parchment-lined cookie sheets.
**bake for 7-8 minutes - cookie will be chewy. (if you want crispy cookies, bake 9-10 minutes)
**cool on baking sheet for 1-2 minutes then remove to wire racks to cool completely.enjoy!

I'm about to give these a try, but your ingredients list doesn't mention eggs. How many?

Sorry, for the last couple days I didn't mention the eggs. I have since fixed it...2 eggs!

My husband would love these! I've made the butterscotch cookie recipe that is on the package of butterscotch chips, but this one looks way better!
