Coconut Butter Thins

This Tuesday with Dorie I have decided to not join in.
The Halloween Holiday had me baking like a Mad Woman.
And now there is baked goods everywhere in our kitchen.
This is a repost of some great cookies,
try them you'll love em'

It's Tuesdays with Dorie and this week's item is Coconut Butter Thins found on page 145 of Dorie's book. This recipe was chosen by Jayne of The Barefoot Kitchen Witch.

Instead of macadamia nuts, I used the crushed pecans that I had on hand. This made these buttery shortbread cookies taste like "Pecan Sandies" with a hint of coconut. These were super easy to make.
Per the instructions in the book.....after mixing the dough, I placed it in a plastic one gallon container. I then rolled the dough so that it perfectly fit in the bag flat. Then I put it in the freezer for a half an hour, before cutting off one side and slicing into squares.
They bake at a low temperature for about 17 minutes.

Well they look gorgeous! I liked these cookies more than I thought I would. I keep nibbling at them LOL
