Birthday Dinner ----Chicken Marsala!

My all time favorite birthday meal, is something so quick and easy to make. Especially when you have to make it for yourself, LOL.... You can serve it over pasta, rice, gnoochi, or just by itself. Anyway you serve it, you will love it! I actually made this last night, because my family had taken me out for my birthday. The week has flown by so quickly it has been hard to catch up......even with that extra hour of sleep we got in the beginning!


Make sure to use Marsala wine or Marsala Cooking wine. The cooking wine will have more sodium in it, so you may want to take out the salt in the recipe.



INGREDIENTS
- 2/3 cup all-purpose flour for coating
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried oregano
- 6 skinless, boneless chicken breast cut into pieces or left whole and pounded
- 2 tablespoons butter
- 4 tablespoons olive oil
- 1 1/2 cups sliced, white mushrooms or more if you really like them!
- 2 heads of garlic, pressed and chopped
- 3/4 cup Marsala wine
- 1/2 cup Chicken broth



DIRECTIONS
**In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture. (NOTE: You can also add the flour mixture to a ziploc bag, add chicken and shake!)


**In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms and garlic.


**Pour in wine and chicken broth . Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.




Sit back, pour yourself a glass of wine and enjoy!

Looks wonderful. I love chicken marsala as well, but have never made it at home. Seems like I might need to give this one a try.
